'What is a glossy food magazine doing here?' Good question. Trad & True is devoted to everything and anything that people are doing to carry on traditional forms of knowledge in the present, and Saveur fits the bill just fine. There is a great back-to-basics movement that has been stewing in food circles for some time, and Saveur has been at the forefront for over ten years. What makes this food magazine interesting and vital is not some trendy advocacy of "slow food" or fads that have given us tired fusions like wasabi mashed potatoes. Rather, abandoning the urge to offer recipe-upon-recipe without context, as so many magazines and cookbooks do, Saveur focusses on regional cuisines and the traditional aspects of food, presenting recipes only as an extension of the editorial content of the magazine. Some sections read like cultural almanacs, others like personal history, while others try to get at the root of what people value most about food in a given part of the world, whether this be treasured peasant fare or dishes served by a cherished fine restaurant.
